The best fruits to use when making jams and preserves are those that have a good acid and pectin balance such as grapes, grapefruit, lemons, limes, currants, quinces and sour oranges. With fruits high in pectin but low in acid such as sweet apples, sweet guavas and sweet quinces, lemon juice can be added to improve the setting qualities. Fruits low in pectin and high in acid are pineapples, apricots and rhubarb. To increase the pectin quantity, 2
tablespoons of lemon juice should be added for each kilogram of fruit. There are fruits that are low in both acid and pectin and are not suitable for jam making without adding suitable fruit. These include pears, melons, sweet peaches, cherries and most berries. Jellies are made on the same principle as jam, but the fruit is strained so that it is clear and translucent. It should be firm enough to hold its own shape, yet soft enough to quiver when cut. The amount of jelly resulting will be quite a bit less than
